Pork Dumplings

My fiancé is half Chinese and half Taiwanese. Once every while we love to spend a day making and folding tons of little dumplings, eating as many as we can and freezing the rest for later.
This recipe is something we've played and changed many times. We hope you love them as much as we do!
My secret ingredients that really modernize this recipe are softened butter and a hint of maple syrup (I know, trust me!) to sweeten just a tad and add a little more depth of flavor. Usually Chinese recipes use rock or palm sugar to serve this purpose, but maple syrup works just as well and is always available in our pantry!

Ingredients
2 servings
1 lbground pork
2 Tbspginger
1 bunchgreen onion
chopped
4cloves of garlic
0.5white onion
or yellow
2 cupsnapa cabbage
shredded
1 packshitake mushrooms
minced
2 Tbspbutter
softened
1 Tbspmaple syrup
1 Tbspchinese chili powder
2 Tbspsoy sauce
½ tspwhite pepper
½ tspsalt
sesame oil
1 Tbspchinkiang vinegar
dumpling wrappers
2eggs
plain flour
Instructions
Step 1
Chop all vegetables and add to ground pork. Mix well with sauces and spices.
Step 2
Crack eggs into a small bowl and beat. Wrap dumplings one at a time using the beaten eggs to seal them shut. If freezing, sprinkle a small amount of flower on a baking sheet so the dumplings don't stick as you make them.
Step 3
Boil, steam, or pan fry! These dumplings are delicious any way you want them!
Step 4
*As a side note, you can add cooked celery, Chinese chives, and other vegetables as desired. You can also change the meat to beef or chicken. The best about these is that if you're missing one of the sauces or spices, just leave it out! These will still be delicious without Chinese dark vinegar or sesame oil if you don't have any on hand.
