Step 1
Score the bottom of the tomatoes and flash boil in boiling water for 30 seconds. Drain water and peel the skin off the tomatoes. Chop tomatoes and strain from excess water. Chop peppers, onions and crush the garlic. Add everything to a large stock pot. Add sugar, salt and black pepper. Uncovered, bring to a boil. Reduce heat to medium low and let it simmer for 45 mins to an hour. Sterilize around 12 jars (depending on size of tomatoes) and lids for 5 mins. Pour hot salsa into the hot sterilized jars. Wipe off any access juices around the rim. Place on lid and tightly screw on rings. Store in a cool dark place.
