Hummus

Step 1
Using a food processor, blend the chickpeas, lemon juice, garlic, salt, cumin, olive oil and tahini into a paste. If it is too thick, add some reserved liquid from the drained chickpeas. Put the hummus into an ovenproof dish and cover with foil.

Baked Chickpeas

Step 2
Preheat the oven to 180℃. Tip the chickpeas into a bowl and add the olive oil, cumin, turmeric, salt and chili flakes. Toss well until the chickpeas are well coated, then tip out onto a baking tray and bake for 20 minutes. Move them round in the tray halfway through cooking so they dry out evenly and are crunchy.

15 minutes before the chickpeas finish roasting, put the hummus into the oven. Serve the hummus with roasted chickpeas and extra virgin olive oil and some bread sticks or carrot sticks.
