Step 1
Finely chop the tomatoes. Heat a pan over a medium heat with a drizzle of olive oil. Once hit, add the chopped tomatoes with a pinch of salt and cook for 3-4 minutes or until starting to break down. Once the tomatoes have started to break down add the tomato puree, red wine vinegar chilli flakes, sugar and a generous pinch of salt. Cook for 10-15 mins, stirring frequently, or until thickened to a jam like consistency. It will continue to thicken while it cools.
