Beef and Noodles

The best leftover dish with last night's pot roast! Additional seasoning is usually not needed, but salt, pepper, garlic powder, or paprika are possibilities. If you didn't have any mushrooms with your pot roast, you might wish to saute some and add to this dish.

Instructions

Step 1
Prepare egg noodles according to package directions.
Step 2
Meanwhile, shred or cube the leftover pot roast.
Step 3
Combine leftover beef and stock in a large pot or dutch oven. Bring to a simmer over medium heat. Be sure to include the juices from the pot roast, and you can also add mushrooms or vegetable bits that were cooked with it if you wish.
Step 4
Add sour cream if using and stir in and cook another minute. Then add cooked egg noodles to the beef mixture. Stir over medium heat and adjust consistency as needed with beef stock or sour cream.
Step 5
Serve with a vegetable on the side.
