Instructions
Step 1
Peel and dice the onion, carrot and potato and put into the Instant pot
Step 2
Add in the spices and herbs to the pot, plus tbsp oil. Set pot to sauté.

Once spices are fragrant, add the garlic and ginger purée and lamb steak. Cook until steak is lightly browned.
Step 4
Add tinned tomatoes and 300ml coconut milk. Ensure liquids cover the lamb and vegetables.

Set pot to high pressure, 20 minutes. Set lid to Sealing, turn off keep warm.

Once pot has finished cooking, either allow for a natural release or quick release.

Remove pot lid once safe to do so, in order to thicken sauce gently, use a masher or large spoon to break up the carrot and potatoes into the sauce until it’s smooth.

Set pot to sauté to allow the sauce to thicken slightly. Season with salt and pepper to taste.
Step 9
Serve with boiled basmati rice and naan.
