Instructions

Step 1
Preheat oven to 450degrees
Step 2
Clean out giblets make sure it's all out
Step 3
Season inside of chicken with Montreal chicken seasoning
Step 4
Truss your chicken,
Step 5
Rub Olive Ool on your chicken and Season with Montreal chicken to taste
Step 6
Set Onions, Carrots and Celery in middle of roasting pan, lay chicken on top
Step 7
Place Chicken in oven at 450° for 20 minutes. Turn oven down to 325° and cook for 60 minutes
Step 8
Baste chicken with the fat in roasting pan, let cook another 40 minutes or until thermostat insert reads 165°
