Instructions
Step 1
Peel Pumpkin and cut large wedges, toss in coconut oil salt and pepper, grill till golden and put aside
Step 2
Using a vegetable peeler make thin sweet potato chips, soak in salted water for 15-20mins.
Step 3
Cut beans into small pieces and blanch in boiling water for 1 minute. Rinse in cold water.
Step 4
Remove the stalks from the watercress.
Step 5
Deep fry sweet potato crisps and pat dry on a paper towel.
Step 6
Make a dressing with the lemon juice , honey, salt, pepper and coconut oil. Place grilled pumpkin wedges on a plate. Toss watercress, beans and remaining vegetables in the dressing and place on top of pumpkin.
Step 7
Top salad with sweet potato crisps.
