Chicken Gnocchi Soup

I love this soup from Olive Garden so much I had to try to recreate it. I think I have come fairly close.

Instructions

Step 1
Melt butter and olive oil in a large pot or Dutch oven over medium heat
Step 2
Add onion, celery and garlic to cook, stir occasionally until translucent.
Step 3
Whisk in flour and cook 1 minute. Whisk in Cream, thyme and parsley. Simmer until thickened.
Step 4
Whisk in chicken broth. Simmer until thickened, again.
Step 5
Stir in carrots, spinach, chicken and gnocchi. Simmer until carrots are soft and spinach has wilted.
