Din Tai Fung Cucumbers (copycat recipe)
This is a perfect side dish and you’ll be surprised how easy it is to make this copycat recipe from Din Tai Fung style chilled cucumber salad recipe. The first time I had these cucumbers at DTF, I instantly loved them. The Persian cucumbers are extra crunchy and the balance of the sweet and sourness of the dressing pulls it all together. Here’s my copycat recipe!

Instructions
Step 1
Chop the cucumber into 1/2 thick pieces and add salt. Let us sit for 20 minutes. Rinse with water 2-3 times.
Step 2
Place cucumbers into bowl and add the ingredients for the dressing.
Step 3
Toss together and chill for 15-20 minutes before serving.
