Honey, soy and garlic cucumber salad. The secret is using firm Persian or English cucumbers for that extra crunchiness. It’s a perfect side dish!

Instructions

Step 1
Thinly slice the cucumbers and sprinkle on salt. Let this sit for about 30 minutes. The salt will soften the cucumbers and drain out the moisture. Squeeze the cucumbers onto a paper towel to help get them as dry as possible. Add the chopped green onions.
Step 2
Combine rice wine vinegar, honey, soy sauce sesame, oil and grated garlic. Stir.
Step 3
Pour on dressing and sesame seeds. Mix and refrigerate for one hour before serving.
