Pesto Parmesan Focaccia

This is such a delicious way to top your focaccia - the basil pesto gets pushed into the dough before baking, so you have bursts of pesto flavour in every bite. The Parmesan on top of the focaccia gets all toasty and crispy…it’s definitely one to try!
This focaccia makes the BEST sandwiches, or you can serve it alongside soup/salad or as an accompaniment to your favourite pasta dinner 😍

Instructions
Step 1
Make the focaccia dough according to recipe instructions. Once it’s proofed in the tray for about two hours, you’re ready for step two.
Step 2
Mix the basil pesto with the olive oil and drizzle it all over it the top of the dough. You might not use all of it, it depends on how pesto-y you want it. Any pesto that remains can be used as a dip for the focaccia!
Step 3
Sprinkle over the grated Parmesan and the fresh basil and then dimple the dough.
Step 4
Bake according to recipe instructions. Let cool for 15-20 minutes before cutting.
