Strawberry daifuku & peanut mochi

This is “the best mochi in the world”, according to my uncle.
And it’s easy to make too. The mochi takes under 3 minutes in microwave and the strawberry is like a nice surprise when you bite into it.
The peanut filled version is a common dim sum dessert that’s made of roasted ground peanuts and sugar. It’s a comfort food for me.
This recipe makes 8 mochi balls.

For the mochi
Strawberry red bean filling
Peanut sugar filling
For dusting
Instructions
Prepare mochi
Step 1
Put all mochi ingredients in a microwave safe bowl and mix well with spatula
Step 2
Cover with Saran Wrap and microwave on high for 1 minute
Step 3
Mix well, cover and microwave again for another min
Step 4
Mix well again, cover and microwave for 30 seconds
Step 5
Place cooked mochi on floured board to cool and then cut into 8 equal portions
Make strawberry daifuku mochi
Step 6
Take 1 portion of mochi, stretch and flatten it wearing gloves for easy handling
Step 7
Add 1 tsp red bean paste in middle and then place half of a cut strawberry on top
Step 8
Pinch all corners of mochi to the top to close the mochi
Step 9
Roll mochi in flour to prevent sticking. Dust off excess flour and repeat to make 3 more mochi pieces.
Make peanut sugar mochi
Step 10
Mix peanut, sugar and water together to make a paste
Step 11
Take 1 portion of mochi, stretch and flatten it wearing gloves for easy handling
Step 12
Add peanut mixture in middle and pinch all corners of mochi to close the top
Step 13
Roll mochi in flour to prevent sticking. Dust off excess flour and repeat to make 3 more mochi pieces.
Step 14
Serve immediately or store excess in airtight container and refrigerate for up to 1 week
