Pandan peanut mochi - microwave recipe

These pandan flavoured mochi with peanut filling is delicious and easy to make. The mochi takes under 3 minutes in microwave and red bean paste goes well with this too (store bought red bean paste tastes great too).
This recipe makes 8 mochi balls.

Instructions
Prepare peanut filling
Step 1
Blend toasted peanuts in food processor till fine/ powdery
Step 2
Add sugar to blended peanut and mix well
Prepare mochi
Step 3
Mix all ingredients in a bowl and cover bowl with Saran wrap. Microwave for 1 minute on high
Step 4
Remove from microwave and mix well, then cover again and return to microwave for another minute on high
Step 5
Once again, mix well, cover and return to microwave for 30 seconds
Making the mochi balls
Step 6
Place cooked mochi on a dusted flour board with tapioca starch to cool for a few mins
Step 7
Cover mochi with tapioca starch and cut mochi into 8 equal pieces
Step 8
Using food/ vinyl gloves dusted with starch, take 1 portion and flatten into a disc. Place 1 tsp of peanut mixture in the middle (if peanut mixture is too powdery, add a little water to mix it into a paste)
Step 9
Pinch opposite ends of the mochi together till the bottom is completely sealed. Roll mochi in starch to prevent sticking. Repeat till all 8 mochi balls are made.
Step 10
Store excess in airtight container
