Pili-Pili Sauce

A traditional and easy hot sauce from Rwanda. Pronounced "pee-lee pee-lee", also spelled pilipili. From the Atlantic to the Indian Ocean, this word is used throughout tropical Africa to refer to hot red peppers and sauces made from them, and foods cooked with these peppers or sauces. Ingredient notes: - Regarding chillies- traditionally very hot chillies are used but if you prefer less spice then use chillies of your choice. The same goes for seeds- include seeds to add more heat and exclude to reduce heat This recipe makes one small bowl, enough to serve 10 if hot and using a little or 5-6 if using more generous portions. Store in a clean jar or pot in the fridge. It will last for 1-2 weeks. Recipe tested and photographed by Miriam

Instructions

Step 1
Mix all ingredients by hand or puree in a food processor or with a hand blender
Step 2
Cook in a frying pan over a medium heat for 3-5 minutes, stirring to prevent sticking. If using hot chillies it is best to use the extractor fan whilst you cook the sauce to prevent any irritation and coughing from the spice
Step 3
Serve with anything and everything... Enjoy!
