Instructions
Step 1
Pour about 1/2 inch oil in cast iron skillet and heat until temperature of oil reaches 350 degrees.
Step 2
Rinse, and dry okra. Cut off caps and bottoms and cut crosswise into 1/2" slices.
Step 3
In a medium bowl, beat egg.
Step 4
Add cornbread mix, milk, and salt to make a pancake batter.
Step 5
Dredge okra in flour, and shake off the excess.
Step 6
Dip a few pieces at a time in cornbread batter and place in heated oil.
Step 7
Fry in deep fat for about 3 minutes or until brown.
Step 8
Let the okra drain on paper towels and continue batches of okra until all is cooked.
Step 9
Serve with ranch dressing.
Alternate recipe:
Step 10
Mix egg and milk together. Then add sliced okra and let sit 10 minutes in egg mixture. Add egged okra to dry Jiffy cornbread mix. Then add okra to oil, one at a time.
