2sweet potatoes
medium-big
1 teaspoonpaprika powder
1 teaspooncinnamon
1 teaspooncumin
¼ teaspoonchili flakes
2 teaspoonolive oil
salt
pepper
1.5 dlwalnut
1 dlsunflower seeds
0.5 dlbreadcrumbs

0.5onion
finely chopped
2 clovesgarlic

2 dlcheddar cheese shredded
2eggs
100gfeta cheese
2 dlcreme fraiche
1 teaspoonhoney
Instructions
Step 1
Put the nuts and seeds in a food processor with the blade attachment. Process until it has an oatmeal texture. Mix with the breadcrumbs, onion, garlic, cheese, eggs, salt and pepper. Leave alone for 15 minutes
Step 2
Warm up the oven to 200C
Step 3
Peel the potatoes (if you want) and cut in 7mm thick slices. Mix the paprika, cinnamon, cumin, chili flakes, salt and pepper and olive oil. Brush the potatoes with the oil and spice mix and spread on a baking sheet lined with parchment paper.
Step 4
Form the nut mixture into 12 equal balls. Put them in between the potato slices.
Step 5
Roast in the oven for 15-20 minutes or until the balls are golden and the potatoes slices are soft.
Step 6
Mix the feta cheese, creme fraiche, honey, salt and pepper. Put in the fridge until ready to eat.
Step 7
Serve the potatoes and balls with the feta cheese cream. You can add lettuce (or spinach), tomatoes and eventually basil.
