Instructions

For the tangzhong:

Step 1
In a medium sauce pan over medium heat, stir the milk and flour until a paste forms. Transfer to a separate bowl, cover with plastic film, and allow to cool to room temperature before using.

For the dough:

In the bowl of your stand mixer, combine the room temperature milk, melted butter, granulated sugar, vanilla extract, and instant yeast. Give it a whisk.

Add the room temperature tangzhong and egg. Whisk until combined. It’s okay if it’s lumpy.
Step 4
Add the flour and the salt, knead on medium speed for 2-3 minutes until the dough comes together. Add the room temperature butter, knead for another 5-8 minutes until the dough is smooth and falls off the hook. Do the window pane test.

Note: this is a sticky dough. If you’re kneading by hand, there’s tutorials on YouTube on how to properly do this. Don’t add too much extra flour, you’ll dry it out.
Step 6
Form the dough into a ball and place it a greased bowl. Cover with plastic film.

Let it rise in a warm environment for 40-60 mins. Until doubled in size.
Step 8
Cut out 10-12 squares of parchment paper and set aside.
Step 9
Gently punch the gas out of the dough. Roll it out onto a floured surface.
Step 10
Use a 4” metal heart shaped cookie cutter to cut out the donuts.
Step 11
Place them on the prepared cut out of parchment paper.
Step 12
Cover with a kitchen towel and let them rise for 20 minutes.
Step 13
Do the poke test, if they’re not fully proofed, let them rise for another 5-10 mins.
Step 14
Note: do not under / over proof your donuts. This will affect the final result and they won’t hold their shape well!

Frying:

Step 15
Line 2 large baking sheets with paper towels and set aside.
Step 16
In a medium sauce pan, heat 2” of vegetable oil to 350F.

Fry on each side until golden brown.
Step 18
Note: monitor the oil. If it’s too hot, the donuts will burn on the outside and remain raw on the inside. If it’s too cool, they’ll come out soggy.
Step 19
Place the donuts onto the lined baking sheets and allow to drain for a few minutes.

Filling / dusting:

Fill a piping bag that’s fitted with a nozzle tip with the strawberry jam.
Step 21
Tips: If your strawberry jam is hard to pipe, microwave for 20 seconds and stir before filling up your piping bag. If there’s strawberry chunks in your jam, your piping nozzle will get clogged.
Step 22
Fill your donuts. Add as much as you want, I stop once they start to feel heavy.
Step 23
In a small bowl, combine the powdered sugar and freeze dried strawberry powder.

Dust your donuts and enjoy.
