Ingredients

For The Brine

12 lbsTurkey

water
3/4 the way up your pot

1 cupkosher salt

1 cupbrown sugar
packed

2oranges
Juice of and the peel

1lemon
Juice of, and the peel

¼ cupvinegar
white or apple cider

⅓ cuppepper corns

fresh sage

fresh bay leaf

fresh thyme

fresh rosemary
For the Compound Butter

3.5 sticksunsalted butter
room temp

15 clovesgarlic
minced

Fresh thyme
chopped, amount to your preference

Rosemary
Chopped, the amount is to your preference

Sage
chopped, the amount is up to you and your preference

1 tsponion powder
adjust to your liking

2 tspseasoning salt
adjust to your liking

½ Tbsppaprika
adjust to your liking
Seasonings for the outside of the Turkey

Smoked Paprika
measure with your heart

Seasoning Salt
measure with your heart

Adobo
measure with your heart
Garlic Butter (For Injecting)
Instructions
Step 1
First and foremost, Clean your Turkey and remove any of the extra bits from inside of your Turkey (the neck, etc..)
Step 2
Fill a large pot with water, about 3/4 of the way up - to prevent your brine from over flowing when you add your Turkey in)
Step 3
Add in all of your brine ingredients
Step 4
Bring to a boil
Step 5
Turn off the heat, and allow your brine to cool COMPLETELY before adding your turkey in (you can do the ice method if you’d like to move the cooling process along )
Step 6
Once your brine has cooled down, add your turkey, cover your pot and let it sit overnight in the fridge (24 hours preferred)
Step 7
The next day, rinse your turkey off, pat it down dry, & separate the skin from the meat (prepare your compound butter as well)
Step 8
Prepare the Compound Butter: Combine room temp butter, minced garlic, chopped sage, rosemary, thyme, onion powder, seasoning salt and paprika. Mix until well combined
Step 9
Add your butter mixture under the skin & all over the turkey (don’t forget the bottom of your turkey)
Step 10
Season with Paprika, Seasoning salt, & Adobo, rub in your seasonings all over the turkey
Step 11
Inject your Turkey with your garlic butter
Step 12
Add your Turkey to a roasting/ Turkey rack
Step 13
Bake at 400 for amount needed for the size for your turkey (2.5 hours for a 12lb turkey)
Step 14
Every 30 minutes while cooking, inject your Turkey with the juices that have fell to the bottom of your roasting rack
