2 ingredients is all you need for these deliciously
fluffy banana pancakes. A very healthy alternative
to a normal pancake and you're not compromising
on taste. Top with whatever you like! This recipe yields 8 pancakes which I have served for 2 people. Double up if you want more!

Instructions
Step 1
Start by mashing your bananas in a bowl
Step 2
Add your eggs and whisk together
Step 3
Optional step to add 1/2 tsp vanilla extract
Step 4
Heat some butter or oil / spray in a pan and use an ice cream scoop to pour your mixture into the pan
Step 5
Cook on a low heat for 3-5 minutes each side. Once the mix looks like it's firmed up, use a spatula to flip them over and cook the other side for a further 3-5
Step 6
Serve onto a plate and tip with your favourite toppings. I've used Greek yoghurt, raspberry jam, peanut butter and cinnamon.
