Nomnom banana fritters with a hint of vanilla. Everyone loves these. And the best part? No added sugar! Tip: don’t use very ripe bananas to keep sugar content down. The riper the banana, the more sugar it contains.

Step 1
Whisk the egg in a bowl. Add 2-3 drops vanilla essence.

Peel and cut the banana in chunks.

Add the banana and flour to the egg and mash using a fork or potato masher.

Heat a little butter in a frying pan on high heat. Add the fritter mixture in spoonfuls to the pan. You should get about 3-4 fritters.

Very easy and quick to make with few ingredients. Served it topped off with raspberries, banana slices and lemon drizzle. Great also when paired with fried/grilled halloumi.
