Chocolate Chip Cookies

This recipe I find is very loose, meaning that you can play around with it. I usually eyeball some of the ingredients such as the salt and vanilla extract. You can incorporate chocolate chips, nuts, candies, pretty much anything. They taste delicious and because I play around and eyeball, every batch is unique. Some rise and are fluffy while others spread out and are more crunchy. It just depends on the way I make them. Everytime there is a surprise. I think that it is absolutely lovely.

Instructions

To Start

Step 1
Preheat the oven to 375Β°F. My oven runs hot so I usually do 370Β°F. Take out 2 flat baking pans. DON'T GREASE THEM. Lay down parchment paper cut to size on both, or if you have pans that prevent sticking just put the cookie dough directly on the pans. Don't worry about exact spacing when putting the cookies down. I can usually fit about 12 cookies on each pan, 3x4. When placing them try to make them all the same size or use a scoop.
Step 2
Soften, Partly Melt, or Melt the butter. I've done all and they all work well. Put the butter into a large bowl or a stand mixer. Add in both of the sugars and mix well.
Step 3
Add in the egg and the vanilla extract. Mix well again. Use the stand mixer to mix, or use a wooden spoon. Try to refrain from using a whisk.
Step 4
When you put the dry ingredients in you can either mix them all up and then add them into the wet ingredients, or add them one at at time. I do the latter. Add in the salt and the baking soda. Mix. Then, in portions, usually 3, add the flour in. Mix between each addition.
Step 5
Finally add in your desired add ins, making sure to not over crowd the dough. You can also experiment with the salts and extracts.

Baking

When putting the dough onto the pans, don't try to make them round. Just place them on, trying to size them equally. Bake for 10 minutes, and take them out!! When you take them out, leave them on the pans for a minute or two then take them off. Put them on a plate or a cooling rack. Put paper towel down on the plate or cooling rack beforehand. These cookies sometimes leave extra oils that will soak up. As the cookies cool, they usually flatten a bit. So don't be worried if they look like they're too fluffy or have too much volume. They'll usually go down. Plus, as long as they taste good there is nothing to worry about. :)
