Instructions
Step 1
Pre heat oven to 190 reg / 170 fan
Step 2
Add all dry ingredients to a bowl except choc chunks, stir through lightly to break up any lumps
Step 3
Add all wet ingredients to a separate jug or bowl, combine just enough to break up and stir through the egg
Step 4
Make a well in the dry ingredients, add the wet, lightly and quickly stir through just so all combined. Do not over still or muffin will be tough
Step 5
Add the chocolate chunks, reserving some to sprinkle on top. Stir through, then split mix between the cases (Note: these rise like mad, so stop when mix is 3 or 4ml from top of case - use another case if needed).
Step 6
Sprinkle remaining choc chunks on top, then bake for 18 mins or until a skewer comes out clean (if you hit a choc chunk it won't, so use common sense there).
