Instructions
Step 1
Boil your potatoes for 20 minutes in salted water
Step 2
Add celery, onion, garlic and carrots into big pot and sauté with butter for about 5-10 minutes
Step 3
Once sautéd add flour and mix
Step 4
Once flour is mixed in slowly add in vegetable stock and continuously stir
Step 5
Add in potatoes, pickles, pickle juice and dill. Add salt and pepper to taste, stir and simmer for 20-30 minutes
Step 6
Add in 1 cup of cheese *of choice I just like havarti* and half a cup of heavy whipping cream and mix
Step 7
Ready to serve I like adding sriracha and sour cream on top!
