Instructions
Step 1
Pre-heat oven to 200℃.
Step 2
Mix the flour and sugar together in a bowl.
Step 3
Melt butter, add milk, egg and lemon rind and whisk with a fork to combine. Add the liquids to the dry ingredients and mix (don not over-beat).
Step 4
Spray a 12 hole muffin pan with non-stick cooking spray. Spoon the mixture into pan and bake at 200ºC for 12-15 minutes.
Step 5
Stir together the lemon juice and sugar without dissolving the sugar, and drizzle over the hot muffins.
