Ingredients

2 tablespoonsolive oil
1 lbground beef
½ cupchopped onion
¾ cuptomato sauce
1 tablespoondijon mustard
1 teaspoonworcestershire sauce
1 teaspoonkosher salt
¼ tspground black pepper
2 tablespoonsunsalted butter
2 tablespoonsall-purpose flour
1 cupmilk
warmed
3 cupscheddar cheese
grated
1 lbfrozen tater tots
¼ cupchives
minced, for garnish
Instructions
Step 1
Preheat oven to 375°.
Step 2
Heat olive oil in 9 or 10 inch cast iron skillet over medium heat. Add the ground beef and onion and cook until browned, about 10 minutes. Stir in tomato sauce, mustard, Worcestershire, salt and pepper. Remove from heat and set aside.
Step 3
Heat a saucepan over medium heat. Add butter and cook until melted. Stir in flour and cook, whisking constantly, until it begins to brown, about 2 minutes. Slowly whisk in milk. Remove from heat and whisk in grated cheese.
Step 4
Pour cheese sauce over meat mixture in cast iron. Tightly arrange tater tots over cheese sauce.
Step 5
Bake for 40-50 minutes, until the filling is bubbling and the tater tots are golden brown. Let cool for a few minutes then sprinkle with chives and serve.
