Instructions

Step 1
In a large pot, heat 1 tbsp of olive oil over medium high heat. Saute chicken until fully cooked. Transfer chicken to bowl.
Step 2
Heat another tbsp of olive oil in the same pot and add the onion, celery and carrots. Stir occasionally until onions are translucent.
Step 3
Add chicken broth, curry powder, lemon juice and cauliflower. Boil until cauliflower is tender. Dump everything out of the pot into a blender and blend until smooth.
Step 4
Pour mixture back into the pot. Add the coconut milk, chicken and broccoli. Simmer until broccoli is tender. Serve with cheese on the side for optional sprinkling
