Grease and line a thin sheet tray

Whisk eggs and sugar until thick and creamy

Layout a peice of greaseproof paper and spinkle with sugar

Remove from oven and immediately turn out onto the prepared paper

Trim any crispy edges and spread with jam or whipped cream

Roll up from one end
