Instructions
Step 1
Shred the cheddar cheese using a grater or food processor. Set aside.
Step 2
Place the cubed butter in the food processor to chop butter into small pieces.
Step 3
Add the shredded cheese to the butter and blend for a few seconds.
Step 4
Add the flour to the cheese/butter mixture and pulse till all ingredients are combined.
Step 5
Depending in the type of cheese used, you may want to add a Tbsp or 2 of milk/cream if the dough is too dry.
Step 6
Take the dough out of the food processor and form a dough ball. Knead the dough by hand if required.
Step 7
Roll the dough out to a 6mm thickness. Use cookie cutter to cut shapes out.
Step 8
Place the cookies on a parchment paper lined baking tray, leaving an inch of space between each cookie.
Step 9
Wash the tops of the cookies with the egg wash.
Step 10
Sprinkle pumpkin seeds, sesame seeds, flax seeds, sunflower seeds, or caraway seeds on top of the egg washed cookie.
Step 11
Preheat oven to 350F

Step 12
Bake in preheated oven for 15 to 20 minutes for a soft cookie. Remove from oven when bottom edges of cookie are starting to colour. OR
Bake in preheated oven for 20 to 25 minutes for a crisp cookie. Remove from oven when cookies are golden in colour.
Step 13
Let cookies cool on a wire rack. Place cool cookies in an air tight container. Can be frozen for longer storage. Store in fridge, serve at room temperature.
