Step 1
Rinse Bob's Red Mill 13 Bean Soup Mix, then soak overnight in water to cover.
Step 2
The next day, drain and rinse the beans.
Step 3
Cook bacon, set aside to cool.
Step 4
Empty can of tomatoes into crock pot.
Step 5
Add chopped onion, minced garlic, chili powder and beans to tomatoes in crock pot. Stir.
Step 6
Crumble bacon and add to crockpot mixture. Set 2-3 strips of bacon aside to garnish soup later.
Step 7
Simmer soup in crock pot on medium for 8 hours.
Step 8
Garnish with crumble bacon that was set aside and parsley and enjoy!
