Ingredients

3 ozFrench bread
crusts removed, cubed
2 cupswater
divided
0.33blanched almonds
cupped, lightly toasted
2garlic cloves
2 ½ cupsseedless green grapes
1 ¼ cupscucumber
chopped, divided
1 ½ tablespoonssherry vinegar
2 tablespoonsextra virgin olive oil
divided
¼ teaspoonkosher salt
3 ozlobster meat
steamed, coarsely chopped
1 tablespoonfresh chives
thinly sliced
Instructions
Step 1
1. Combine bread crumbs and 1 Cup water in a bowl or shallow dish. Let stand until bread has completely absorbed the water, about 2 minutes
Step 2
2. Process almonds and garlic in a blender on low speed until coarsely chopped
Step 3
3. Add bread cubes, remaining 1 cup water, grapes, One Cup cucumber, vinegar, one tablespoon oil and salt to almond mixture. Process until smooth
Step 4
4. Pour mixture into a bowl and chill until cold, about one hour
Step 5
5. Return bread mixture to a blender and process to redistribute any solids that have settled, about 15 seconds
Step 6
6. Ladle about 2/3 cup soup into each of eight bowls. Divide lobster evenly among them and drizzle with remaining one tablespoon oil
Step 7
7. Top with remaining 1/4 cup of cucumber and chives
Step 8
8. Garnish with Aleppo pepper if desired and serve cold
