These are Vanilla Cupcakes with Strawberry Jam Filling topped with Lightweight and Fluffy Frosting. No buttercream this time.

Ingredients

Cupcakes
2eggs
1 ½ cupAll Purpose Flour
½ cupMilk
¾ cupButter
Melted
½ cupsugar
2 tspvanilla extract
¼ tspsalt
1 ½ tspbaking powder
Frosting
Instructions
Step 1
In a bowl mix Dry Ingredients (Flour, Salt, Baking Powder) and set aside
Step 2
eparate bowl beat together 2 Eggs & 1/2 cup (100 g) Sugar until Sugar fully dissolves
Step 3
Add 3/4 cup (170 ml) Melted Butter in portions while beating the Eggs
Step 4
Make sure Butter is not very hot
Step 5
Add 2 tsp Vanilla Extract
Step 6
Start adding in portions 1/2 cup (120 ml) Milk & Dry Ingredients (alternate)

Line your muffin/cupcake pan with liners. Distribute the Dough
Step 8
Bake for 30-35 min at 350F (175C).
Step 9
If you are not sure if your Cupcakes are baked through, just make a hole in one of them (you will do it later anyway) and check the inside.
Step 10
If it’s not chewy - time to get them out from the oven. If it’s not ready yet - just put it back into the oven

Make holes in the Cupcakes. Fill them with your favorite Jam
Frosting
Step 12
Beat together Powdered Sugar, Heavy Whipping Cream and Vanilla Extract
Step 13
Check consistency of the Frosting repeatedly. It’s very easy to overbeat the Cream, so it gets grainy consistency. It should be smooth and silky while being firm enough to hold its shape.
Step 14
Pipe the Frosting using your favorite piping tip on top of the cupcakes. Or just use a spoon
Step 15
Add Sprinkles and Enjoy!
