Instructions

Step 1
Preheat your oven to 400 degrees Fahrenheit.

Whisk to combine your brown butter, sour cream, brown sugar, sugar, vanilla, and eggs. Add your sifted flour, cornstarch, baking powder, and salt. Set aside.
Step 3
Make your cinnamon-sugar filling: Whisk to combine your brown sugar, flour, cinnamon, and salt. DO NOT add the butter yet.
Step 4
Distribute 2 tbsp of batter in each lined muffin tin, sprinkle 1/2 tbsp of the cinnamon-sugar mixture, and scoop another 2 tbsp of batter on top to create layers. Set aside.
Step 5
Make your crumble topping: With the leftover cinnamon-sugar mixture, add the cubed cold butter. Using a fork or your hands, work the butter into the dry mixture so that you are left with a crumbly consistency. Evenly divide the crumble topping among the muffins.
Step 6
Bake at 400 degrees Fahrenheit for 20-25 minutes or until a toothpick inserted in the center comes out clean. Allow to slightly cool and enjoy while it's warm!
