1 teaspoonlemon juice
2 teaspoonscornstarch
1 cupall-purpose flour
¼ cuplight brown sugar
¼ cupwhite sugar
1 teaspoonbaking powder
½ teaspoonsalt
6 tablespoonsbutter
cold and cut into cubes
¼ cupwater

Instructions
Step 1
1. Preheat oven to 425 degrees
Step 2
2. In large bowl, combine 8 sliced fresh peaches peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart Pyrex dish.
Step 3
3. Bake in preheated oven for 10 minutes to cook the peaches a bit.

4. While the peaches mixture is in the oven, in another bowl combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt.
Step 5
5. Blend in butter with a fork or a pastry blender, until mixture resembles coarse meal. Stir in boiling water until all is combined.
Step 6
6. Remove peaches from oven, and drop spoonfuls of topping over the semi-baked peaches. Sprinkle entire cobbler with the sugar and cinnamon mixture before placing cobbler in the oven. Bake about 30 minutes until the top is golden brown.
