German Potato Salad

This German Potato Salad is very delicious and full of flavors. It is served warm or room temperature. Note: the potatoes don’t have to be red, you can use yellow. The red gives the dish color.

Instructions

Step 1
1. Place potatoes in steamer basket in pot with 1 1/2 cup over medium heat. Cover with lid for 20 mins. (Note: you can also boil the potatoes) 2

2. Cook bacon in skillet (or pan) over medium high heat until crispy, leave drippings in.
Step 3
3. Add onions to skillet with drippings, cook for 5 mins or until caramelized. Add garlic and cook for 30 seconds longer
Step 4
4. Pour chicken broth, apple cider vinegar, Dijon mustard and sugar. Bring liquid to a simmer and let reduce about half a minute to two
Step 5
5. Add chopped potatoes, bacon, and olive oil, and toss (or stir in). Season with salt and pepper.
Step 6
6. Remove from heat, toss in parsley. Enjoy!
