Instructions
Step 1
Make the croutons - heat your oven to 190c.
Step 2
Place the torn bread in a bowl and drizzle with olive oil, add the garlic and fennel seeds and grate in Parmesan.
Step 3
Season, toss, and place in the oven till toasted (about 10 mins).
Step 4
Make the dressing - place the egg, garlic, anchovies, horseradish, lemon & Worcestershire sauce into your blender and blend till smooth, slowly add the olive oil and season
Step 5
Assemble your salad - place the salad leaves, chicken, avocado, red onion and anchovies in a salad bowl, pour over dressing and toss.
Step 6
Add the croutons and spoon onto your plate.
Step 7
Scatter over the soft boiled eggs and grate on a lot of Parmesan.
