This recipe is my roommates go-to lunch meal. She meal preps the farro and chickpeas and then just reheats :)

Instructions
Step 1
Preheat oven at 425°
Step 2
Boil water and prepare your farro according to instructions
Step 3
Drain your chickpeas and then pat them dry. Add olive oil and your creole seasoning (or just salt and pepper)
Step 4
Put chickpeas on a baking sheet and cook them for 20 minutes
Step 5
Add your greens, chopped veggies, feta, dressing, cooked farro, and crispy chickpeas
Step 6
Enjoy!
