Three Pea Chicken Salad

Ingredients
8 servings
4 sprigstarragon
+ 2 Tablespoons minced leaves
2shallots
large, 1 halved, 1 minced
2garlic cloves
1 smashed, 1 minced
1 poundboneless skinless chicken breasts
kosher salt
freshly ground pepper
¾ cupplain greek yogurt
3 tablespoonsextra-virgin olive oil
0.5 poundsugar snap peas
thinly sliced, stringed
1 cupfresh english peas
shelled, or frozen, thawed
½ cupsnow peas
thinly sliced, stringed
¼ cupflat-leaf parsley
finely chopped
¼ cupfresh chives
finely chopped
2 teaspoonslemon zest
finely grated, plus
1 tablespoonfresh lemon juice
8 leaveslettuce
8 sliceswhole grain bread
toasted
Instructions
Step 1
Place tarragon sprigs, halved shallot, smashed garlic, and chicken in a medium saucepan.
Step 2
Add water to cover by 1 inch and season with salt and pepper.
Step 3
Bring water to a boil; remove pan from heat, cover, and let stand until chicken is just cooked through, 15 to 25 minutes, depending on size of chicken breasts.
Step 4
Transfer chicken to a plate and let cool. Shred or dice chicken.
Step 5
Meanwhile, whisk yogurt, oil, minced shallot, and minced garlic in a small bowl. Season dressing with salt and pepper.
Step 6
Combine all peas in a medium bowl. Add chicken, dressing, minced tarragon, parsley, chives, lemon zest, and lemon juice; toss to coat.
Step 7
Season to taste with salt, pepper, and additional lemon juice, if desired. Serve spooned over lettuce leaves on toasted bread.
