Instructions
Step 1
Boil 1 3/4 cups water per cup of quinoa. Add quinoa to boiling water, then cover and reduce to low to simmer. Cook for 15+ minutes until all liquid is absorbed. Remove from heat and let cool
Step 2
After quinoa has cooled, place in a large bowl and stir in balsamic vinegar. Use just enough to coat the quinoa.
Step 3
Add remaining ingredients and stir in with quinoa. Toss with balsamic vinaigrette
