This is a well balanced hearty filling pasta salad full of Greek flavors that tastes great the day it’s made and even better the day after . Perfect for meal prep and for a healthy filling lunch on the go

Ingredients

240 gramsfusilli
1red pepper
diced
0.5cucumber
diced large
1 cupsliced olives
20sun dried tomatoes
sliced
80 gramsfeta cubes
1 cupcherry tomatoes
halved
1can white beans
large
2shallots
sliced
For the dressing
Instructions
Step 1
Cook the pasta well done in salted boiling water then strain and add to a large bowl with a drizzle of olive oil and a splash of white wine vinegar and mix
Step 2
Chop and slice all the veggies and add them to the bowl with the beans cheese and season to taste with salt and black pepper
Step 3
Add all the ingredients for the dressing in a bowl and mix then drizzle half over the salad and toss together . Add more dressing if you want it more creamy . Store in sealed sterilized containers in the fridge for up to 5 days . Enjoy
