Instructions
Step 1
Heat oven to 375°. Combine 4 tablespoons softened butter, half cup white miso, 2 tablespoons honey, 1 tablespoon unseasoned rice vinegar, and black pepper in a large bowl, and mix with a spoon/spatula until well combined.
Step 2
Add up to 8 chicken thighs to the bowl, and massage the miso butter mixture all over it.
Step 3
Place the chicken in a single layer in a roasting pan, and slide it into the oven. Roast for 30 to 45 minutes, turning the chicken pieces over at once or twice, until the skin is golden brown and crisp and the internal temperature is 160° to 165°.
Step 4
While the chicken is cooking, roast or sauté your vegetables.
Step 5
Add cherry tomatoes, garlic, olive oil, salt, pepper, garlic powder, thyme to a small oven dish. In another dish/tray, toss snap peas and - next to them - whole green onions, all with olive oil, garlic powder, salt, and pepper.
Step 6
Bake both at 375 for 20-30 minutes.
