½ cupRice Flour
0.5 CupCorn Flour
½ cupYogurt
1 tspsalt
1 TspRed Chilli Powder
1 TspKashmiri chilli powder
½ tspturmeric powder
½ tspgaram masala
1 tspcoriander powder
1 tspcumin powder
6 clovesGarlic

Instructions
Step 1
Clean cauliflower, cut into small florets, keep immersed in warm water to remove any dirt then drain.
Step 2
Boil water and pour over cauliflower florets, let it sit for 15 minutes.
Step 3
Drain water completely , set aside and let it drip.
Step 4
Crush the ginger and garlic with the help of mortar and pestle.
Step 5
To a mixing bowl add crushed ginger and garlic, chilli powder, Kashmiri chilli powder, coriander powder, cumin powder, garam masala , turmeric , salt and red food colour (optional) . Squeeze fresh lemon juice. Mix all the ingredients, it will help to get most of aroma and flavours out of spices.
Step 6
After add yogurt, cornflour and rice flour. Whisk it together and Add water little by little to form a thick flowing smooth batter.
Step 7
In a large mixing bowl, Add cauliflower florets, pour the prepared batter, chopped curry leavesand mustard oil (in the marinade mustard oil combination like no other) , mix it well.
Step 8
Heat oil in a karahi or wok, keep the flame medium to ensure gobi cook through.
Step 9
Add the florets in batches carefully.
Step 10
Flip over with slotted spoon and keep frying until golden brown on both the sides and crispy.
Step 11
To prepare tempering, In a wok , heat the oil , splatter cumin seeds. Add chopped garlic and ginger, & sauté for few seconds. Add tomato ketchup and chilli sauce & let it simmer for few seconds. In the last add green chillies and curry leaves. Add fried Gobi 65 and toss well.
Step 12
Turn off the heat and serve immediately.
