Instructions
Step 1
Prepare the ingredients.
Finley slice all the chilli's. rough dice the ginger and peel then crush the garlic.
Step 2
Put the chilli's, ginger, and garlic into a food processor and blend using pulse on and off a few times.in short burst until you have a chilli puree.
Step 3
In a saucepan on a low heat add the chilli puree,water and rice vinegar stir together
Step 4
Once warned through stir in the sugar then allow to simmer and reduce for 90 minutes giving it a occasional stir from time to time.
Step 5
After about 90 minutes the sauce should have increased in thickness enough to take off the heat. In a small bowl mix 4 Tablespoons of water with 2 Teaspoons of xanthan to make a gloop . When ready thoroughly mix the xanthan gloop into the chilli puree then allow to cool for 1 hour.
Step 6
Once cooled pour the chilli sauce into a sterilised jar. Store in the fridge for upto 1 month.
Step 7
This recipe is to make 1 jar of Hot and sweet chilli sauce if you prefer less heat try using less of the Birds eye chillies or try removing some of the seeds from the chilli's.
You don't have to use red chilli's green,yellow or whatever else you have should be fine to use.
IF you do not have any xanthan you can use corn flour but it might make the sauce a little cloudy.
