If your blue crabs are not cleaned, and many are, trim the front off of the crab with a scissor. Go about a quarter inch behind the eyes and snip. Next remove the lungs by pulling up on the sides of the shell. They are cone shaped and in a row. Just pull them out. Combine flour, salt and pepper in a ziplock, shake to mix. Add the crabs. Shake it like a Polaroid picture. Heat pan to med- high. Add butter and olive oil. Place crabs in the pan and go 3-4 minutes a side. If your getting “burnt” looking. Drop your heat a bit. You want these golden brown. Flip crabs and hit that same gorgeous color on the other side. About 4 minutes again. Remove and cut in to app size pieces. garnish with chopped parsley and a squeeze of lemon!
