Shrimp toast
10shrimp
peeled and deveined
Ginger

2 stalksScallion
1Egg white

½ tablespoonCornstarch
Fish sauce
4White bread slices
Spicy Mayo
Instructions
Step 1
Cut crust off bread slices and set aside
Step 2
In a food processor add the shrimp, ginger, scallion, egg white, cornstarch, and fish sauce. Blend until it becomes a paste
Step 3
Spread 1/2 the paste onto 1 slice of bread. Spread all the way to the edges. Top with another slice of bread. Repeat for the other 2 slices.
Step 4
Fry in a shallow oil. About 1-2 minutes each side or until golden brown. Place on a plate with paper towel to absorb excess oil.
Step 5
For the sauce mix the mayonnaise, sriracha, sweet chili sauce, and rice vinegar until it is well blended.
Step 6
Cut the sandwich into thirds and serve with the spicy mayo on the side
