Step 1
Bring a pot of salted water to a boil and cook udon to package instructions. Drain and set aside.

In a pan over medium heat, add butter, garlic, and prawns. Season prawns with salt.

Cook prawns for a minute, then flip and add sake.

Cook for another minute and remove prawns.
Step 5
Make a corn starch slurry by combining 1 tsp of corn starch with 1 tbsp of water. To the pan, add light and dark soy sauce, oyster sauce, sugar, chilli flakes, and the corn starch slurry.

Cook until saucy, add in udon, and toss to combine. Season with extra salt and sugar if necessary.
Step 7
Plate up and garnish with sesame oil, scallions, sesame seeds, nori, prawns, and a raw egg yolk. (Feel free to customize this however you like)
