Step 1
Finely chop onion, leek and carrot.

Coat the pan with a bit of grapeseed oil, turn the stove to medium heat and saute the chopped veggies for a few minutes (add a pinch of salt to help release the juices).

Add minced meat to the pan, fry until brown. When meat is cooked through, season with salt and herbs and put aside.

Preheat the oven to 200c.

Peel sweet potatoes and cut them into slices. Soak in cold water until you're ready to fold the moussaka so they don't dry out.

Take a casserole dish and grease it with oil or butter. Start folding the moussaka: row of sweet potato slices, row of meat, and so on until you run out of filling. Finish with potatoes on top.

Pop in the oven uncovered for 20 minutes.

Beat the eggs and add sour cream to them, stir until combined. Take the dish out of the oven after 20 mins, pour egg mixture over it, and pop it back to the oven for additional 20-30 mins.
