Step 1
Break down the Camembert into small chunks with your knife and transfer to a bowl. To the same bowl, also add the butter and cream cheese and start mashing with a fork until the three are nicely mixed (this mixture will be very thick)
Step 2
Add the beer and keep mixing, until you reach a slightly runnier consistency, but not liquidy
Step 3
At this point, add the spices, mix and set aside
Step 4
Chop the onion very finely, transfer to a small bowl and add about 1tsp of salt
Step 5
After 10 minutes the onion should’ve let go of a lot of its juice, so squeeze it with your hand and add it to the other bowl. Mix and serve with optional chives as a topping!
