These gluten free and vegan Mexican Wedding Cookies will quench that craving for a melt in your mouth dessert. I've always loved wedding cookies, so when I gave up gluten and dairy, I was excited to find a way to replicate them! 😋

Instructions
Step 1
Preheat oven to 400°F. Cream together butter, powdered sugar, vanilla extract, and water. (The water won't combine.)

Step 2
Sift flour, salt, baking soda, and cinnamon into a separate bowl. Add zest and stir to evenly distribute. Add gradually to butter mixture. Stir in chopped nuts.
Step 3
Form dough into balls (about the size of the small bouncy balls you can get out of a bubble gum machine), place them on a parchment papered pan and flatten. If they aren't flat enough, the texture won't turn out right.
Step 4
Bake for 11-13 minutes or until the bottom of the cookies are golden-brown.
Step 5
Take the cookies out of the oven and allow to cool slightly. While the cookies are still warm, roll them in powered sugar. Once the cookies cool completely, you can coat them in powered sugar again, if desired.
