Instructions
Step 1
Whisk eggs, sugar, salt and all ground spices together.
Step 2
add self raising flour and baking powder into mix and continue to whisk.
Step 3
Mix 75g melted butter with oil. Whisk into the egg mix. Finally add in carrots and seeds. Bake for 35 mins
Step 4
For frosting, beat 25g butter with icing sugar until soft and fluffy. Mix in the mascarpone, melted white chocolate (optional) and orange juice.
Step 5
Once sponge has chilled to room temperature. Spoon and spread frosting generously on top.
